Herb & Olive Pork Steaks
If you like and eat pork, this is a recipe to try. It is quick enough for a midweek meal, but impressive enough to serve to guests.
The marinade is the hero of this recipe, as well as being delicious, it is versatile so could be paired with chicken if you don’t eat pork.
I halved split green olives. If you are looking for a more delicate finish, then chop them more finely.
Sitting the meat in the marinade embues the lovely flavour through the meat, and keeps it tender.

A surprisingly easy meal that looks and tastes fabulous. It works well as a midweek meal or equally at home being served to guests.

- Add 1 tablespoon oil to a large skillet and heat to medium-high.
- Season the pork steaks with a generous pinch of salt.
- Add the pork to the pan. Cook until golden underneath, about 6 minutes. Turn over and continue to cook. The thickness of your steaks will determine how long it takes them to finish cooking.
- In a large shallow dish, combine the olive oil, olives, shallot, lemon juice, parsley, garlic and thyme. Season and mix well.
- Transfer the steaks to the marinade and turn to coat.
- Let the steaks marinate, turning and basting occasionally, for 10-15 minutes.
- Serve and enjoy.
