Chorizo & Halloumi Salad
It is no secret I love a tray bake, and chorizo and halloumi are two of my favourite foods - so it is understandable why this recipe is right up there as one of my favourites!
It is easy to prepare, it is flavoursome and is adaptable. You can add chicken and or herbs (I often add parsley), change the vegetables, use baby spinach instead of rocket, use feta instead of halloumi and change the spice element … it really is quite forgiving.

This is one of my favourite meals when I am time poor and hungry - it is as simple as cutting up the ingredients, baking then mixing in with rocket and lemon juice and voila, a flavoursome dinner is on the table! It is also very adaptable, you can add in chicken (thighs or breast), if you have carb lovers add in some chat potatoes, swap the halloumi for feta or use baby spinach instead of rocket.
Ingredients
- 4 chorizo sausages, sliced
- 2 smaller or one large red capsicum, chopped
- 250g halloumi, chopped into cubes
- 2 tbsp olive oil
- 1 tbsp paprika based seasoning (I used Mingles's Mexican Seasoning)
- a couple handfuls of rocket
- juice of 1 or 2 lemons
- salt to taste
Instructions
- Preheat oven to 200C.
- Add all ingredients (except lemon & rocket) to a tray, and mix through the seasoning.
- Bake for 30 minutes, or until everything has that lovely browned look.
- Place rocket in a serving bowl.
- Add the chorizo and halloumi mix, and lightly toss with the lemon juice.
- Sprinkle with salt.
- Serve ... enjoy :)
