Crunchy Coleslaw
This is another one of my favourite salads. It’s packed with flavour and crunch and is super versatile. It is on high rotation in my kitchen because we can enjoy it for dinner and then for a few days following for lunch.
When enjoying it for dinner (often accompanying chicken schnitzels), I complete the recipe. If I am making it to take to work or for lunches, I omit the dressing and mix in Sirena tuna, plus a drizzle of olive oil and apple cider vinegar.
It makes a delicious accompaniment to many meals - think steak, lamb, and rissoles, and looks fabulous on a mezze table.
Nuts and Seeds
The lovely crunch in this salad comes from a mix of roasted nuts and seeds. My standard combination is pinenuts, slivered almonds, pepitas and sunflower seeds. I use this combo in many dishes, so often roast double the mixture and store the leftovers in a jar in the fridge for next time.
Avoid commercial mayonaise
One of the hidden issues in our modern diet is the use of highly processed seed oils. They are incredibly unhealthy for us, damaging to our gut and leading to inflammation. Unfortunately, they are cheap and used in many foods, such as mayonnaise. Examples include canola, corn, cottonseed, soybean, sunflower, safflower, grapeseed, and rice bran. You can buy olive oil mayonnaise, but it is typically only sold in specialty food stores and delis and is quite expensive. One alternative is to make your own, using an egg yolk, olive oil, mustard and lemon juice.
Colourful Coleslaw
Ingredients
- ½ small red cabbage, shredded or finely sliced
- 1 large or 2 small red capsicums, diced
- 1 large or 2 small yellow capsicums, diced
- 1 bunch coriander, chopped
- ½ bunch parsley, chopped
- ¾ - 1 cup mixed nuts/seeds, toasted (I use a mixture of pinenuts, slivered almonds, pepitas and sunflower seeds)
- 2 tbsp mayonnaise (I prefer to use one made from olive or avocado oil to avoid the highly processed seed/vegetable oils)
- juice of 1 or 2 limes (can add zest too)
- sprinkle of sea salt
Instructions
- Mix all salad ingredients together.
- Add mayonnaise and lime juice, and toss.
- Season to taste.
