Nicoise Salad
For me, a Nicoise salad is the perfect antidote to the excesses of Christmas and New Year festivities! It is simple, clean, quick and easy! I often change the ingredients based on what I have, but I do like to always include tuna, olives, capers, eggs and a crisp lettuce. I always add a little more lemon juice to the dressing too - to make it extra tart!

Ingredients
- good handful of green beans, trimmed and cut in half
- 2 tomatoes, cut into 8ths
- 1 baby cos lettuce, cut into large bite size pieces
- 3 hard-boiled eggs, peeled and quartered
- ½ small container of pitted Kalamata olives
- 2 tbsp capers, drained of brine
- 425g can Sirena tuna in oil, drained
- 2 tbsp lemon juice
- 4 tbsp extra virgin olive oil
- 1 small garlic clove, crushed
- pinch of sea salt
- 1 tsp Dijon mustard
Instructions
- Blanch beans till just cooked, and rinse under cold water to stop them cooking further. Drain, pat well to dry.
- To assemble the salad, place cos lettuce at base of wide and flat bowl. Add tuna chunks on top, following with the beans, tomatoes, olives, capers and eggs.
- Add lemon juice, olive oil, garlic, mustard and salt to a jar, and shake to emulsify.
- Drizzle with dressing over and serve!
