Chicken & Vegetable Bake
With cooler weather descending on Melbourne, my thoughts turn from salads to bakes. Tonight, I was in the mood for chicken and vegetables with a creamy sauce. It is comforting, healthy, and easy to prepare.
The beauty of this recipe is that it is made in one pan, except the sauce, and comes together very easily. I do not cook the vegetables through as I like them to be a little crunchy. If you like your broccoli and cauliflower well cooked, cover the pan when you add it to the chicken so it cooks through a little more.
This recipe is hearty comfort food at its best!
Chicken & Vegetable Bake

Winner, winner, chicken dinner! This one pan (almost!) is a delicious combination of chicken and vegetables baked with a satisfying cheese top.

- Preheat the oven to 200C.
- Heat 2 tablespoons olive oil in a large skillet. Add bacon, onion, and garlic; cook until onion is soft, about 5 minutes. Add chicken and cook until chicken is cooked, stirring occasionally for about 10 minutes.
- Stir in broccoli and cauliflower and cook for 10 minutes.
- Heat a saucepan over medium heat. Add cream, cream cheese and seasoning and and cook until melted, stirring often.
- Pour sauce on top and add grated pizza cheese.
- Bake in the preheated oven until cheese is melted and browned to your liking, about 15 minutes.
