I love a one-pot wonder, and this Spanish inspired Chicken, Chorizo & Tomato Bake fits the bill perfectly. It is a crowd-pleaser and works well reheated, which is an added bonus.

Is it Chorizo or ‘"cho-ree-thoh" ’?

The pronunciation of "chorizo" can vary depending on the regional accent and language. In Spanish, it's pronounced as "cho-ree-thoh," with the stress on the second syllable. - Preheat the oven to 180C.
- Place the chicken thighs in a large baking dish and salt liberally.
- Scatter the chorizo pieces over the chicken, followed by the basil (leave a small handful to scatter at the end), tomatoes, garlic and olives.
- Drizzle over the olive oil and balsamic vinegar.
- Bake for 40 minutes, or until the tomatoes are slightly charred and the chicken is cooked through and slightly browned where it pokes through the sauce.
- Scatter with more basil, serve and enjoy :)
