Sausage Rolls
Who does not love a sausage roll?! And, the good news is, you do not have to go without just because you prefer to live low carb!
This recipe calls for a slight variation on the basic fathead dough, with the use of pizza cheese rather than mozzarella cheese. It gives its pastry a little more flavour but does not detract from the 'pastry' qualities. I explain fathead dough in more detail here.
I have been using the same meat filling for over 20 years - the secret is a good dollop of chutney. If you are feeling virtuous, then omit or use a low carb version ... but I didn't, I used a store bought, albeit gourmet version.

- Set oven at 200 C
- Microwave the pizza cheese & cream cheese until melted. Stir well.
- Put it into the food processor with the rest of the ingredients and mix till combined and process for a few minutes.
- Make a ball. Roll out to a couple of mm thickness and cut into sections about 15cm wide - enough to put the meat filling in the middle.
- To prepare sausage rolls, place an inch wide amount of sausage mix along the rolled out pastry.
- Roll up the pastry to encase the meat. Press the join to secure. With a sharp knife, slice the logs into sausage roll size pieces.
- Place on a baking tray that has been lined with a baking sheet or baking paper.
- Brush over the egg wash or melted butter and sprinkle with the everything but the bagel seasoning.
- Bake in the oven for 30 min or until golden brown and cooked through.
